June/Ukraine: Shashlik (Ukrainian meat kabobs) Шашлык

My goal is to find a recipe that works for cooks who've never been to Ukraine, who have no "swords," and who have no access to special ingredients. Therefore, I've combined about half a dozen recipes for the following: SHASHLEEK Шашлык Serves 6-8 3 lb. pork (loin, butt, neck meat specially cut) 1/4 c. apple cider vinegar, cooking wine, or part lemon juice 3 cloves garlic 1 1/2 large onions 1 T. parsley 1 t. coriander 1 t. salt (less if using cooking wine) 1/4 t. pepper 3 bay leaves, torn into fourths Apple or zucchini slices, optional Mineral water, optional Cut meat into 2-inch cubes. Rub down with 1/2 cup mayo. Prepare marinade: Puree onions and garlic. Add seasonings (along with optional apple slices and mineral water). September/Bulgaria: Sach

The sach dish, used for traditional method of cooking in Bulgaria, is made of heavy clay. The sach can be used on the stovetop to brown foods, and also in the oven for baking. The sach is also attractive enough for serving, and the thick clay holds the heat to keep food piping hot on the table. NOTE: If you're putting a cold sach in the oven, make sure the oven is also cold, or the clay will break. If you do not have a sach (Who does!), try using a Mexican rice pot, an Eastern European cabbage roll casserole dish, or any heavy baking dish with a lid. Traditional Bulgarian Meat & Veggie Sach Serves: 4 Prepare meat: 3/4 lb. chicken or pork: Cube meat in about 1-inch pieces. Prepare marinade and pour over meat. The perfect pairing with shashleek or any grilled meat is Ukrainian potato salad (olivier salad), your choice of another salad, and brown bread. Ukrainian Salads Letha's Carrot Salad Serves 12-14 7-8 cups carrots, grated (2-lb. bag) 4 Tbsp. white vinegar 3 tbsp. sugar 1 tsp. salt 1 tbsp. coriander 1 tsp. black pepper 1 clove garlic (or 1/2 tsp. minced garlic in oil) 1/2 c sunflower oil (or other mild flavored oil) Grate carrots and place in metal bowl. Whisk together dressing ingredients and toss over carrots. Leave covered salad on kitchen counter several hours or overnight, then refrigerate.
