September/Buglaria: Shopska Salad - Шопска салата


I would move to Bulgaria for the food, especially this salad. Grate the cheese, don't crumble it. Believe me, it's better that way. Don't use olive oil; this salad comes from Eastern Europe, not western. If you find Bulgarian Sirene cheese...lucky you! 


Shopska Salad 

For every (large) serving, place 2 cups of vegetables in each individual bowl  

  • Cucumbers (English or Armenian variety)
  • Chopped tomatoes
  • Bell pepper 
  • Green onion
  • 1/2 T. fresh parsley
  • 1 T. sunflower oil (olive oil not recommended) 
  • 1/2 T. red wine or white vinegar
  • Salt and pepper to taste

  •  feta or Bulgarian sirene cheese (1/4–1/2 cup)

Cube cucumbers (unpeeled), tomatoes (discard some of the seeds if desired) and green pepper in 1/2-inch chunks. Dice green onion and parsley. Sprinkle lightly with salt and pepper, oil, and vinegar, and toss. Taste and add more salt if needed. Top with finely grated (not crumbled!) cheese. Garnish with a black olive and a sprig of parsley.
